Kiwi Walnut Bread recipe

A lovely, fragrant quick bread made withkiwifruit and walnuts.

Recipe: Kiwi Walnut Bread

2 cups all-purpose flour1/2 cup granulated sugar2 teaspoons baking powder1 teaspoon baking soda1/2 teaspoon salt1 1/2 cups kiwifruit, drained and chopped3/4 cups walnuts, chopped1 large egg, beaten1/4 cup butter or margarine, melted1 teaspoon vanilla extract

  • Sift flour with sugar, baking powder,baking soda and salt into a large bowl. Add kiwifruit and walnuts,and mix well. Add egg, butter and vanilla. Stir until just blended.
  • Pour mixture into a greased and floured9 x 5 x 3-inch loaf pan.
  • Bake in a preheated oven at 350°F(175°C) for one hour or until a wooden toothpick insertednear the center of the loaf comes out clean.
  • Let the bread cool in the pan five minutes,then place it on a rack to complete cooling.
  • Serve in thin slices spread with softenedcream cheese.

    Make 6 to 8 servings.
