Kiwi Cranberry Fool recipe

An attractive dessert for special occasions,the green kiwifruit and red cranberries make it ideal for theholidays.

Recipe: Kiwi Cranberry Fool

3/4 cup low fat sour cream3 tablespoons confectioner’s (powder)sugar1/3 cup dried cranberries1/3 cup orange juice1/2 teaspoon orange zest2 tablespoons confectioner’s (powder)sugar1 1/2 California kiwifruit, peeled andmashed with a fork1 tablespoon confectioner’s (powder)sugar2 fresh mint sprigs2 clear 8-ounce wine glasses

  • In a small bowl, blend the sour creamwith the 3 tablespoons of confectioner’s sugar. Reserve.
  • Place the cranberries in a small saucepanwith the orange juice and 2 tablespoons of confectioner’ssugar. Gently cook over medium-low heat for about 5 minutes oruntil the cranberries swell and the liquid thickens and reduces.Stir in the orange zest. Reserve, allowing to cool completely.Mix the kiwi puree with the tablespoon of confectioner’ssugar. Reserve.
  • Divide the sour cream mixture equallyinto three small bowls. Remove 2 tablespoons of each of the cranberrysauce and kiwi puree and reserve. Place the remaining cranberrysauce in one bowl of sour cream and blend. Place the remainingkiwi puree in another bowl of sour cream and blend well.
  • Divide the cranberry-sour cream mixturebetween the two wine glasses. Cover each with 2 tablespoons ofthe reserved kiwi puree.
  • Place half the sour cream-confectioner’ssugar mixture on top of the layer of kiwi puree in each glass.Cover these layers with 2 tablespoons of the cranberry sauceand then the kiwi-sour cream mixture. Refrigerate until readyto serve. Garnish with a mint sprig.

    In a bowl, whip the remaining cream with the remaining sugar until soft peaks form. Scrape onto the cranberry mixture and fold 1-2 times to very lightly marble. Spoon between 5 small bowls – the fool will marble more as you spoon into the dishes. Cover and chill for at least 2 hrs or up to 24 hrs.


    Remove 2 tablespoons of each of the cranberry sauce and kiwi pur e and reserve.
