An attractive dessert for special occasions,the green kiwifruit and red cranberries make it ideal for theholidays.
Recipe: Kiwi Cranberry Fool
3/4 cup low fat sour cream3 tablespoons confectioners (powder)sugar1/3 cup dried cranberries1/3 cup orange juice1/2 teaspoon orange zest2 tablespoons confectioners (powder)sugar1 1/2 California kiwifruit, peeled andmashed with a fork1 tablespoon confectioners (powder)sugar2 fresh mint sprigs2 clear 8-ounce wine glasses
In a small bowl, blend the sour creamwith the 3 tablespoons of confectioners sugar. Reserve.
Place the cranberries in a small saucepanwith the orange juice and 2 tablespoons of confectionerssugar. Gently cook over medium-low heat for about 5 minutes oruntil the cranberries swell and the liquid thickens and reduces.Stir in the orange zest. Reserve, allowing to cool completely.Mix the kiwi puree with the tablespoon of confectionerssugar. Reserve.
Divide the sour cream mixture equallyinto three small bowls. Remove 2 tablespoons of each of the cranberrysauce and kiwi puree and reserve. Place the remaining cranberrysauce in one bowl of sour cream and blend. Place the remainingkiwi puree in another bowl of sour cream and blend well.
Divide the cranberry-sour cream mixturebetween the two wine glasses. Cover each with 2 tablespoons ofthe reserved kiwi puree.
Place half the sour cream-confectionerssugar mixture on top of the layer of kiwi puree in each glass.Cover these layers with 2 tablespoons of the cranberry sauceand then the kiwi-sour cream mixture. Refrigerate until readyto serve. Garnish with a mint sprig.
