Key Lime Cake recipe

Simply ‘lime-icious, this ‘cake-mix-easy’cake is iced while hot with a simple lime and powdered sugaricing.

Recipe: Key Lime Cake

2 tablespoons lime juice
1 (18.25-ounce) package yellow cake mix
1 (3.5-ounce) package instant lemon pudding mix
4 large eggs
1 cup vegetable oil
1 cup water
2 cups powdered sugar, sifted
1/3 cup lime juice

  • Preheat oven to 325°F (160°C).
  • Combine lime juice, yellow cake mix, instantlemon pudding mix, eggs, oil, and water in a mixer bowl; beatuntil smooth.
  • Pour into a greased 13 x 9-inch bakingpan. Bake for 45 minutes, or until done. Cool for 10 minutes.Pierce with a fork. Mix powdered sugar and lime juice in a smallbowl. Pour over the warm cake.

    Makes 12 servings.
