Jungle Bars recipe

These healthy snack bars are made withbananas, an assortment of dried fruits, granola, almonds andcoconut.

Recipe: Jungle Bars

2 ripe medium bananas8 ounces dried figs8 ounces dried apricots8 ounces pitted dates8 ounces raisins2 cups granola8 ounces chopped almonds, toasted1 cup flakes coconut

  • Coarsely chop bananas, figs, apricots,dates, raisins and granola in food processor or run through foodgrinder.
  • Stir in almonds.
  • Press mixture into 13 x 9 x 2-inch bakingpan. Sprinkle with coconut. Cover and refrigerate 24 hours toallow flavors to blend.
  • Cut into squares.

    Makes about 24 bars.

    Add the cooled butter mixture and the milk mixture to the dry ingredients and mix very well with a spoon—or even better, just get in there with your hands!
