Recipe: Jeweled Cookies
1 1/2 cups all-purpose flour1 teaspoon baking powder1/8 teaspoon baking soda1/8 teaspoon ground nutmeg1/3 cup butter1/3 cup granulated sugar1/4 cup packed brown sugar1 large egg1/2 teaspoon vanilla extract1/2 cup chopped candied pineapple and/orcherries2 tablespoon chopped blanched almonds
In a bowl combine flour, baking powder,baking soda and nutmeg, mixing well; set aside.
In a mixing bowl, beat butter and sugars.Add egg and vanilla; mix well. Stir in pineapple and almonds.Stir in candied fruit and almonds; add flour mixture and combineuntil just mixed.
Spread into a foil-lined 8 x 4 x 2-inchbaking pan. Cover and chill for at least 2 hours. Invert doughonto a cutting surface; remove foil. Cut into 1/4-inch slices;place on greased baking sheets.
Bake at 350°F (175°C) for 10 to12 minutes or until lightly browned. Transfer to wire racks tocool. Recipe may be doubled.
Makes about 2 1/2 dozen cookies.
