Japanese Peanut Cookies recipe

These peanut cookies are simple and deliciousand a great way to end a Japanese meal.

Recipe: Japanese Peanut Cookies

1 3/4 cups cake flour1/2 cup butter or margarine1 cup brown sugar, packed2 large eggsDash of vanilla extract1/2 cup or more coarsely crushed peanuts

  • Mix the butter and brown sugar until fluffythen beat in the egg and vanilla. Mixthe flour into the batter. Add peanutsand mix lightly.
  • Drop from a teaspoon onto a greasedbaking sheet. Flatten with a fork dipped inflour. Chill in refrigerator for 20 minutes.
  • Bake at 320°F (160°C) for 15 to20 minutes.

    Makes about 2 1/2 dozen.
