Jambalaya with Shrimp recipe

There are as many versions of jambalayaas there are Louisiana cooks! This version stars shrimp witha cameo role played by ham.

Recipe: Jambalaya with Shrimp

4 tablespoons butter1 large onion, chopped2 cloves garlic, finely minced1/4 cup ham, cut into strips2 tablespoons all-purpose flour1 (14-ounce) can diced tomatoes1 teaspoon dried basil2 cups uncooked long-grain white rice3 1/2 cups chicken or vegetable broth2 pounds peeled shrimp

  • In a large saucepan, melt butter overlow heat; add onions, garlic, and ham;cook and stir until onion is soft. Stir in flour and cook for1 minute. Stir in tomatoes, and cook for 5 minutes. Mix in basil,rice and broth. Cover, and simmer for15 minutes.
  • Add shrimp, stirring to distribute evenly.Cook for 5 minutes more, or until rice iscooked and shrimp turns pink.

    Makes 6 servings.
