Recipe: Jamaican CurriedChicken
1 whole chicken, about 3 to 4 poundsJuice of 2 fresh limes3 large garlic cloves, finely minced2 green onions, finely chopped1/4 inch fresh ginger, peeled and finelyminced1 1/2 tablespoons curry powder1/4 teaspoon allspice1 teaspoon granulated sugar2 teaspoons salt2 tablespoons vegetable oil2 cups water3 medium potatoes, washed and cubedSuggested Accompaniments:Mango ChutneySlices of dried coconutFresh pineapple chunksOrange segmentsRipe bananas
Cut chicken in 1 1/2 to 2-inch servingpieces. Squeeze the juice of the limesinto a large bowl of water; wash the chicken pieces inthe water and drain.
In small bowl mix the garlic, green onionsand ginger; allow flavors to blendfor 30 minutes.
Mix curry powder and allspice with sugarand salt. Rub spice mixture and the garlic mixture ontothe chicken. Place in a glass bowl; coverand allow to “marinate” for 1 hour.
In large heavy skillet, brown chickenin hot oil over medium-high heat. Add the water and potatoes. As soon as liquid starts to boil, reduceheat, cover and simmer until chicken is cooked, approximately20 to 30 minutes. Chicken should betender and juices run clear.
Dress up curried chicken with accompanimentsserved with flair. The usual accompanimentis Mango Chutney, but slices of dried coconut,pineapple chunks, orange segments, ripe bananas, will do.
