Jamaican Coconut Pudding recipe

Baked Jamaican coconut bread pudding.

Recipe: Jamaican CoconutPudding

1/2 shredded or flaked coconut1/4 cup dry bread crumbs1 cup milk2 large eggs2 tablespoons butter2 tablespoons granulated sugar1/8 teaspoon salt

  • Preheat oven to 350°F (175°C).
  • Put all ingredients in a blender and beatuntil smooth. Pour into a buttered pie dish and bake for 1 hour.

    Serves 6.
