Turkey tenderloin ‘steaks’ are precookedin a microwave and finished off on the grill, brushed with aneasy glaze made with chopped jalapeno chiles, apricot jelly,butter and lime juice.
Recipe: Jalapeño GlazedTurkey
2 pounds turkey tenderloin, cut into servingpieces
1/3 cup apricot jelly
3 jalapeño chiles, seeded and chopped (see note)
2 tablespoons butter or margarine
1 tablespoon lime juice
Makes 4 servings.
Note: Because hot peppers contain oilsthat can burn your eyes, lips and skin, protect yourself whenworking working with peppers by covering one or both hands withplastic gloves or bags. Be sure to wash your hands thoroughlybefore touching your eyes or face.
