Italian Love Cake recipe

Ricotta cheese is a common ingredient inItalian desserts. This cake combines the delicately sweet cheesewith a rich chocolate cake. The result is a moist, delectabledessert topped with a fluffy chocolate frosting.

Recipe: Italian Love Cake

1 (18.25-ounce) package chocolate cakemix
3 large eggs
1/3 cup vegetable oil
4 cups ricotta cheese, drained*
1 cup granulated sugar
1 teaspoon vanilla extract
1 (3.5-ounce) package instant chocolate pudding
1 (16-ounce) container non-dairy whipped topping, thawed

  • Preheat oven to 350°F (175°C).Grease and flour a 13 x 9 x 2-inch cake pan. Prepare cake asper package instructions using 3 eggs and 1/3 cup oil; pour intoprepared pan and set aside.
  • Combine ricotta cheese, sugar and vanillain a large mixing bowl; mix until thoroughly combined. Drop inlarge spoonfuls over cake batter. Swirl decoratively throughthe batter with a butter knife. Bake for 1 hour or until a woodenpick inserted in the center comes out clean. Remove from oven;cool down.
  • Meanwhile, combine chocolate pudding mixand non-dairy whipped topping; beat by hand until smooth, about3 to 4 minutes. Frost cake when totally cool. Refrigerate 1 hourbefore serving.

    Makes 12 servings.

    *To drain ricotta cheese, wrap in a doublelayer of cheesecloth. Place in a colander and weigh down witha few cans. Allow to drain over a bowl in the refrigerator for1 hour.

    This cake looked so good i had to make it for my birthday.. it is literally in the oven right now and let me just say the ricotta mix went on beautifully and even if it turns out i dont like the cake.. which i doubt.. that would be fine because the yummy frosting recipe is worth it! I live in colorado so i had to modify the cake recipe a little for high altitude but i am so excited to see how it goes! Thanks again for the recipe! Making this South Beach friendly was my thought too ..with the ricotta in there why not go sugar free all the way? How did it turn out?? .
