Recipe: Italian Love Cake
1 (18.25-ounce) package chocolate cakemix
3 large eggs
1/3 cup vegetable oil
4 cups ricotta cheese, drained*
1 cup granulated sugar
1 teaspoon vanilla extract
1 (3.5-ounce) package instant chocolate pudding
1 (16-ounce) container non-dairy whipped topping, thawed
Makes 12 servings.
*To drain ricotta cheese, wrap in a doublelayer of cheesecloth. Place in a colander and weigh down witha few cans. Allow to drain over a bowl in the refrigerator for1 hour.
