Italian Cheesecake recipe

This recipe makes two cheesecake pies madewith ricotta cheese.

Recipe: Italian Cheesecake

1 1/2 pounds ricotta cheese
1 (8-ounce) package cream cheese
3 large egg yolks
1/2 cup granulated sugar
2 tablespoons brandy
2 tablespoons vanilla extract
2 (9-inch) graham cracker pie crusts
1/4 cup chocolate syrup

  • In a large mixing bowl, combine togetherricotta cheese, cream cheese, egg yolks, sugar, brandy, and vanilla,beating until well-blended.
  • Pour into 2 (9-inch) graham cracker piecrusts and drizzle with chocolate syrup.
  • Bake in a 350°F (175°C) oven for30 minutes, or until the center is set.

    Makes 16 servings.
