Irish Ham and Potato Pie recipe

This tasty ham, potato and egg pie canbe served anytime of the day, from breakfast to supper.

Recipe: Irish Ham and PotatoPie

6 large eggs
1/2 cup green onions chopped1/2 teaspoon salt
1/2 teaspoon pepper
3 cups cooked diced potatoes
1 1/2 cups (6 ounces) shredded Swiss cheese
1 cup diced cooked ham
1/2 cup finely chopped green bell pepper
1/2 cup half-and-half

  • Preheat oven to 350°F (175°C).Generously butter a 9-inch pie dish.
  • Whisk together the eggs, onions, saltand pepper in large bowl.
  • Add potatoes, cheese, ham, bell pepperand half and half.
    Stir to blend. Pour into prepared dish.
  • Bake for 1 hour 20 minutes or until testeddone when a knife inserted in the center comes out clean. Cutinto wedges to serve.

    Makes 4 to 6 servings.
