India-Style Chicken with Tomatoes and Garam Masala recipe

A spicy main dish of chicken with tomatoesseasoned with garam masala.

Recipe: India-Style Chickenwith Tomatoes and Garam Masala

5 tablespoons vegetable oil3/4 teaspoon whole cumin seeds1 inch stick of cinnamon5 whole cardamom pods2 bay leaves1/2 teaspoon whole peppercorns2 medium onions, finely chopped6 to 7 cloves garlic, finely minced1-inch cube fresh ginger, minced6 medium tomatoes, peeled and chopped*3 pounds chicken pieces, skinned1 1/2 teaspoon salt1/8 to 1/2 teaspoon cayenne pepper1/2 teaspoon Garam Masala

  • Heat the oil in a large, wide pot overmedium heat. When hot, put in the cuminseeds, cinnamon stick, cardamom, bayleaves and peppercorns. Stir once andimmediately add the onions, garlic and ginger. Stirthis mixture around until the onion picks up brownspecks.
  • Now put in the tomatoes, chicken,salt and cayenne pepper. Stir to mix and bringto a boil. Cover tightly, turn heatto low and simmer for 25 minutes oruntil chicken is tender. Stir a few timesduring this cooking period.
  • Remove cover andturn up heat to medium. Sprinkle inthe Garam Masala and cook, stirring gentlyfor about 5 minutes in order to reduce the liquidsomewhat.

    Serves 4.

    Note: The whole spices in this dish shouldnot be eaten. You will probablyhave to go to a specialty market to find someof the spices in this recipe. Do try it because this isone dish not to be missed.

    *Substitute with 1 (28-ounce) can of tomatoes,undrained.
