Imogene’s Apricot Oatmeal Bars recipe

Imogene’s oatmeal bars have a layer ofapricot jam sprinkled with coconut and a crumb topping.

Recipe: Imogene’s ApricotOatmeal Bars

1 1/4 cups all purpose flour
1 1/4 cups quick-cooking oats
1/2 cup granulated sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup butter
2 teaspoons vanilla extract
1 (about 12-ounces) jar apricot jam
1/2 cup coconut, shredded

  • In a bowl combine flour, oats, sugar,baking soda, and salt. Mix well. Add butter and vanilla. Stirtill crumbly. Reserve 1 cup of mixture. Press remainder of crumbmixture into a greased 13 x 9-inch pan.
  • Spread apricot jam on top of the batterto within 1/4-inch of the edge of the pan. Sprinkle with thereserved crumb mixture and shredded coconut.
  • Bake at 350°F (175°C) for 20 to25 minutes, or until browned. Cool and cut into bars.

    Makes 36 bars.
