Iced Lemon Cake Cookies recipe

‘Cake-mix-easy’ lemon cookies topped witha sweet-tart lemon icing…truly ‘home-baked’!

Recipe: Iced Lemon Cake Cookies

1 (18.25 ounce) package lemon cake mix2 large eggs1/3 cup vegetable oilLemon Icing:1 cup powdered sugar1/2 teaspoon lemon extract1 tablespoon milk

  • Preheat oven to 350°F (175°C).
  • Mix together cake mix, eggs and vegetableoil.
  • Drop by rounded tablespoonfulsonto non-stick baking sheets.
  • Bake for exactly 8 minutes. Do not overbake!
  • Transfer to wire racks. Frost cookieswhile still warm.
  • To make Lemon Icing, combine powderedsugar, lemon extract and milk, mixing well.

    Makes 2 dozen.
