Iced Horchata.

Iced horchatas are a contemporary spinon a classic Mexican and Spanish summer beverage. It is a greatmake-ahead beverage for entertaining or special family treats.

Recipe: Iced Horchata

4 cups hot water1 cup white rice, rinsed and drained2 (3-inch) cinnamon sticks1 cup granulated sugar1 cup Original NESTL COFFEE-MATELiquid Coffee CreamerIce cubesGround cinnamon

  • Combine water, rice and cinnamon sticksin large bowl; cool. Cover; refrigerate for 2 hours or overnight.
  • Remove cinnamon sticks. Spoon rice intofood processor or blender (reserve soaking liquid); cover. Processon high for 3 to 4 minutes. Add reserved soaking liquid and sugar;process for 2 minutes. Strain mixture through a cheesecloth orfine sieve into a pitcher, pressing the rice solids until onlya dry paste remains; discard paste. Stir Coffee-mate into mixture.
  • Serve over ice. Sprinkle with cinnamon.
