Honey Pecan Caramels recipe

Free-form nutty caramels, made in yourown kitchen.

Recipe: Honey Pecan Caramels

2 1/2 cups pecan halves
2 tablespoons butter
1 1/2 cups granulated sugar
1/2 cup water
1/4 cup honey
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla extract

  • Preheat oven to 375°F (190°C).
  • Place pecan halves on baking sheet; toastfor 10 minutes, stirring once.
  • Grease the sides of a heavy saucepan withbutter. Add water, salt, honey and sugar to pan. Bring to a boil,stirring constantly. Cook without stirring until soft-ball stageis reached (234° to 236°F on candy thermometer), about10 minutes.
  • Remove from heat. Beat until creamy; stirin cinnamon and vanilla. Add pecans. Turn pecans onto cookiesheet and use two forks to separate into irregular pieces.

    Makes 16 pieces.

    I had to come up with a pie recipe to shoot for my videography class.  Obviously I don t follow the rules well, I had been wanting to try out this recipe I had come up with based on pecan bars.  Let me tell ya its good stuff.  I have a preference to tart recipes over pies, mostly because they can usually involve chocolate.


    Love how you made caramel by heating coconut sugar with butter until caramelised – wonder if coconut butter would work instead of butter?
