Old-fashioned oat cookie bars sweetenedwith dates and honey.
Recipe: Honey-Oatmeal DateBars
3 cups dates, pitted and chopped
Preheat oven to 350°F (175°C).Grease and flour an 8-inch square baking pan; set aside.
Heat dates and water over low heat ina small saucepan, stirring until smooth and thick; set asideto cool.
In a medium mixing bowl, cream togetherbutter and honey. Add flour, oats and baking powder; mix thoroughly.Flatten half into pan.
Spread the date mix over this and topwith the remaining oat mixture. Bake for 30 minutes. Cool beforecutting into bars.
1 1/4 cups water
3/4 cup butter
1/2 cup honey
1 3/4 cups all-purpose flour
1 1/2 cups quick-cooking oats
1/2 teaspoon baking powder
Makes 24 bars.
