Honey Apple Cake recipe

Honey Apple Cake 2.

A deliciously moist, honey-sweetened applecake topped with a honey lemon glaze.

Recipe: Honey Apple Cake

Cake:3/4 cup honey
1/2 cup butter or margarine
1/2 cup dark brown sugar
1/2 cup strong coffee
2 large eggs
3 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1/4 teaspoon ground ginger
2 cups finely chopped apples
Honey-Lemon Glaze:1/2 cup honey
2 teaspoons grated lemon peel
1/2 teaspoon ground cinnamon

  • For Cake: Preheat oven to 325°F (160°C).Grease an 8-inch fluted baking pan*; set aside.
  • Combine honey, butter, sugar, coffee andeggs; beat thoroughly.
  • Combine flour, baking soda, cinnamon,nutmeg, salt and ginger. Add to honey mixture; beat until thoroughlyblended. Stir in apples. Pour into prepared baking pan.
  • Bake for 50 to 60 minutes, or until woodenpick inserted near center comes out clean. Cool in pan 10 minutes.Invert on serving plate. Brush with warm Honey-Lemon Glaze.
  • Honey-Lemon Glaze: In small saucepan combinehoney, grated lemon peel and ground cinnamon; heat until consistencyis thin enough to brush over warm cake.

    Makes 10 to 12 servings.

    *A greased 13 x 9 x 2-inch baking pan canbe substituted.
