A fabulous recipe for homemade German chocolatecake using cocoa.
Recipe: Homemade German ChocolateCake
Cake:1/4 cup unsweetened cocoa powder1/2 cup boiling water2 cups all-purpose flour
Heat oven to 350°F (175°C). Greaseand flour three 9-inch round baking pans.
For Cake: Stir together cocoa and waterin small bowl until smooth; set aside.
Stir together flour, baking soda and salt;set aside.
Beat butter, sugar and vanilla in largebowl until light and fluffy. Add eggs, one at a time, beatingwell after each addition.
Add flour mixture to butter mixture alternatelywith chocolate mixture and buttermilk, beating just enough toblend. Pour batter into prepared pans.
Bake 25 to 30 minutes or until top springsback when touched lightly. Cool 5 minutes; remove from pans towire racks. Cool completely.
For Coconut Pecan Frosting: In a mediumsaucepan, stir together sweetened condensed milk, egg yolks andbutter and cook over low heat, stirring constantly, until mixtureis thickened and bubbly. Remove fromheat; stir in vanilla, coconut and pecans. Cool to room temperature.Spread frosting between layers and over top of cake.
1 teaspoon baking soda
1/2 teaspoon salt1 cup plus 3 tablespoons butter, softened2 1/4 cups granulated sugar1 teaspoon vanilla extract4 large eggs
1 cup buttermilk*Coconut Pecan Frosting:1 (14-ounce) can sweetened condensed milk(not evaporated milk)
3 large egg yolks, slightly beaten
1/2 cup butter
1 teaspoon vanilla extract
1 1/3 cups sweetened flaked coconut
1 cup chopped pecansPecan halves for garnish (optional)
Makes 12 servings.
*Or place 1 tablespoon white vinegar ina measuring cup and add milk to equal 1 cup. Allow to set for2 to 3 minutes before using.
