Holiday Eggnog Cheesecake recipe

A festive, eggnog-flavored cheesecake witha nutmeg-scented graham cracker crust.

Recipe: Holiday Eggnog Cheesecake

1 cup graham cracker crumbs
1/4 cup granulated sugar
1/4 teaspoon ground nutmeg
1/4 cup butter or margarine, melted
1 envelope unflavored gelatin
1/4 cup cold water
1 (8-ounce) package cream cheese
1/4 cup granulated sugar
1 cup commercially prepared eggnog
1 cup whipping cream, whipped

  • Combine graham cracker crumbs, 1/4 cupsugar, nutmeg, and melted butter; press onto the bottom of a9-inch springform pan.
  • Soften unflavored gelatin in cold water;stir over low heat until dissolved.
  • In another bowl, combine cream cheeseand remaining sugar; beat at medium speed with an electric mixeruntil well blended. Gradually add the gelatin mixture and eggnog;mixing until blended.
  • Chill until slightly thickened. Whip creamto soft peaks and fold into the thickened mixture. Pour overthe crust and chill until firm.

    Makes 12 servings.

    Allow the eggnog cheesecakes to cool in the water bath for about 10 minutes, and carefully lift them out and place them on a wire rack to cool completely. Once cool add the flat lid and band to the jars. Chill before serving. First make the graham cracker crust; fill the bottom of the jars with ? of a cup plus 1 tablespoon of the graham cracker crust. If using a springform pan, pat all of the crust mixture into the bottom of the prepared pan.
