Herbed Couscous recipe

A quick and easy side dish of couscousseasoned with minced fresh herbs, extra virgin olive oil, lemonjuice, salt and freshly ground black pepper.

Recipe: Herbed Couscous

1 1/2 cups water
1 cup couscous
1/2 cup minced fresh herbs
2 tablespoons extra virgin olive oil
Lemon juice, fresh to taste
Salt to taste
Freshly ground black pepper to taste

  • Place couscous in a medium bowl.
  • Bring the water to a boil in a tea kettle.Pour over the couscous. Let the mixture stand, covered, for 5minutes. Fluff it with a fork, and stir in the fresh herbs, oil,lemon juice, and salt and pepper. Serve hot.

    Makes 4 servings.
