Herbed Couscous and Vegetables recipe

Couscous is usually found near the riceor noodle aisle at many grocery stores.

Recipe: Herbed Couscous andVegetables

1 tablespoon olive oil
1/2 cup sliced green onions
2 cloves garlic, minced
1 cup reduced-sodium chicken broth
3/4 cup frozen peas
1/2 teaspoon dried basil or Italian seasoning, crushed
1/4 teaspoon salt
1/8 teaspoon ground black pepper
2/3 cup quick-cooking couscous

  • Heat oil in saucepan over medium-highheat. Add onions and garlic and saut for 2 minutes oruntil tender.
  • Add broth, peas, basil, salt and pepper.Bring to boil. Stir in couscous. Remove from heat. Cover andlet stand for 5 minutes or until liquid is absorbed.
  • Fluff with fork before serving.

    Serves 4.

    Not sure if this is too late I just made this recipe, and it was divine! I added some chickpeas and diced red pepper, for good measure. That vinaigrette is really wonderful. Thanks so much! If you are making this for 16 people can you just multiply the ingredients by 4? Usually you can do that but with the couscous I m thinking the proportion of water might not work?
