Recipe: Hearts of Romainewith Parmesan Dressing

1 heart of romaine2 teaspoons white-wine vinegar2 tablespoons extra-virgin olive oil2/3 cup freshly grated ParmesanSalt and freshly ground black pepper totaste

  • Separate romaine leaves.
  • In a large bowl whisk together vinegar,oil, half of Parmesan and season with salt and pepper.
  • Toss romaine with dressing and serve sprinkledwith remaining Parmesan.

    Serves 2.
