Ham-Wrapped Fruit recipe

These appetizers go great for summer timeget togethers or for a holiday appetizer or brunch buffets. Makethem fun with novelty toothpicks.

Recipe: Ham-Wrapped Fruit

1/4 cup light cream cheese
1 tablespoon orange marmalade
2 ounces thinly sliced fully-cooked ham, cut into 1 x 4-inchstrips
1/4 medium cantaloupe or honeydew melon, cut into thin wedgesand peeled
2 kiwi fruit, peeled and sliced

  • In small bowl combine cream cheese andorange marmalade; mix well.
  • Spread cream cheese mixture on one sideof each ham strip. Place a piece of fruit on each ham strip andwrap around fruit. Cover and chill.

    Serves 2.

    As a sweet treat, you can bake a batch of mini Cinnamon Apple Scones ahead of time. The recipe s in my iPad app ; just modify the recipe by forming two small rounds instead of one. If you don t have time to bake and who does in the morning? just add more fruit, throw in a little container of Paleo Trail Mix , or a cup of applesauce.
