Gum Drop Cake recipe

A festive holiday spiced applesauce cakeloaded with colorful gum drop candies. Served in thin slices,the candies appear jewel-like.

Recipe: Gum Drop Cake

4 cups all-purpose flour1 teaspoon ground cinnamon1/4 teaspoon ground cloves1/4 teaspoon ground nutmeg1 cup butter2 cups granulated sugar2 large eggs1 1/2 to 2 cups applesauce1 teaspoon baking soda, dissolved in 1teaspoon hot water2 pounds assorted gum drop candy1 pound raisins1 cup toasted nuts (optional)

  • Combine flour, cinnamon, cloves, and nutmeg;set aside.
  • In large mixing bowl, beat together thebutter and sugar until creamy; add eggs and beat until well mixed.Add applesauce and dissolved baking soda, mixing well. Add theflour mixture until mixed. Stir in the gum drops, raisins andnuts, mixing well.
  • Spoon into a well-greased and floured10-inch tube or Bundt baking pan.
  • Bake in 300°F (150°C) oven for2 hours. Cool on wire rack for 15 minutes before removing frompan.

    Makes 12 to 16 servings.
