Guajillo Pork Chops recipe

Guajillo Pork Chops.

Fast chops with a touch of sweetness. Servewith Mexi-corn and baked sweet potatoes.

Recipe: Guajillo Pork Chops

8 bone-in pork loin chops, 1/2-inch thick
2 cups guajillo, or your favorite tomato salsa
3 tablespoons honey
1 tablespoon oil

  • Reserve 1 cup of salsa; mix with honey.Brush the honey salsa mixture over the pork chops.
  • Heat oil in large skillet over mediumheat. Saut pork for about 10 minutes, turning once untilinternal temperature on a thermometer reads 160°F (70°C).
  • Transfer pork chops to a plate; coverto keep warm. Add reserved salsa to skillet and stir over mediumheat until salsa is warmed; serve with pork.

    Makes 4 servings.
