Grilled Salmon with Strawberry Salsa recipe

Brushed with a honeyed garlic, soy andlemon butter sauce, salmon fillets are grilled and served witha refreshing strawberry and cucumber salsa.

Recipe: Grilled Salmon withStrawberry Salsa

Strawberry Salsa:1 English or seedless cucumber, finelychopped
1 green onion, thinly sliced1 yellow bell pepper, seeded and cut intostrips
1 tablespoon chopped cilantro
3 tablespoons seasoned rice wine vinegar, or to taste
2 cups fresh strawberries, hulled and diced small

1/2 cup unsalted butter
1 clove garlic, minced
1 tablespoon honey
2 tablespoons soy sauce
1 tablespoon fresh lemon juice
6 salmon fillets, or fish of your choice, skinless

  • Mix cucumbers, green onion, cilantro andvinegar. Cover and chill at least one hour. Just before serving,add strawberries.
  • In a small saucepan melt butter with garlicover low heat. Stir in honey, soy sauce and lemon juice and cook2 minutes, set aside.
  • Prepare a charcoal grill, when ready brushsauce on salmon pieces and place on a well-oiled fish grillingrack. Place rack over coals about 4-inches from fire and grillapproximately 4 to 5 minutes on each side. Brush with the sauceagain after turning, and again when done. Transfer to warm platterand top with salsa.

    Makes 6 servings.

    This looks very good. I will try it out! We were on vacation in Oregon one year and ate a very charming restaurant over looking the river. I tried their special of grilled salmon with strawberry peach salsa. It was one of the most memorable meals I have ever eaten. Hey I just wondering, the step, line baking paper with foil do I wrap the foil around the salmon whilst in the broiler? and how do I check for doneness? I m new to this whole cooking thing so can you please explain it to me
