Char-grilled, red onions pair perfectlywith simply grilled salmon.
Recipe: Grilled Salmon withGrilled Red Onions
2 pounds salmon fillet 2 red onions, peeled 4 tablespoons olive oil 2 tablespoons peanut oil 3/4 teaspoon salt – divided use 1/2 teaspoon ground black pepper – divided use
Divide salmon into six pieces. Slice redonions about 1/2-inch thick crosswise.
In a shallow dish, mix olive oil withpeanut oil, 1/2 teaspoon of the salt and 1/4 teaspoon of thepepper. Add onions and turn to coat evenly. Grill for 5 minutes,turn, and grill another 5 minutes or until soft and startingto brown.
Meanwhile, season the salmon with remaining1/4 teaspoon salt and 1/4 teaspoon pepper then brush with theoil mixture. Place on the grill for 3 minutes, turn and grillfor 3 more minutes, or until opaque. Serve with onions.
