A refreshing triple citrus marinade flavorssalmon fillets prior to grilling. (Note: 1/2 cup of the marinadeis set aside for serving with the grilled salmon.)
Recipe: Grilled Citrus SalmonFillets
1/3 cup fresh orange juice1/3 cup fresh lemon juice1/3 cup fresh lime juice2 tablespoon brown sugar, packed1/2 cup finely chopped onion2 tablespoons peeled, finely minced freshginger1/2 cup fresh cilantro leaves, chopped6 (6-ounce center-cut) pieces salmon filletswith skinSalt and freshly ground black pepper totaste
In a blender pur e citrus juices,brown sugar, onion and ginger until smooth.Reserve 1/2 cup marinade. Transferremaining marinade to a large zip-lock style plastic bag andadd the cilantro and salmon fillets, sealbag, removing as much air as possible.Marinate salmon in refrigerator for 1 to 2 hours.
Remove salmon from marinade and discardmarinade. Pat salmon dry. Season salmonwith salt and pepper. Grill, skin side down, on an oiled rack set 5 to 6 inches over glowing coals4 minutes. Put lid on grill and grillsalmon until just cooked through, 3 to 4 minutes more.(Salmon may be grilled in a hot well-seasonedridged grill pan with a lid over mediumheat.) Carefully transfer salmon with a metal spatulato a platter and remove skin.
Pour reserved juice mixture over salmonand serve.
