Green Olive Dipping Sauce recipe

A terrific sauce to serve with French fries!This tasty recipe for Green Olive Dipping Sauce was adapted fromthe dipping sauces served at Suzanne Levinson’s, Pommes Frites,New York, NY.

Recipe: Green Olive DippingSauce

2 tablespoons dry-roasted sunflower seeds3/4 cup pitted green olives (not pimento-stuffed),drained2 teaspoons minced garlic2 1/2 tablespoons extra virgin olive oil1/4 teaspoon finely grated lemon peel1/4 teaspoon freshly-squeezed lemon juice1/2 teaspoon dried basil leaves3/4 cup mayonnaise

  • In a small food processor, process thesunflower seeds until very fine. Remove 1 1/2 teaspoons of theprocessed seeds and place in a small bowl, save the remainderfor another use.
  • Clean the bowl of the food processor.Add the olives and process until pureed.
  • To the olives in the processor, add backthe 1 1/2 teaspoons sunflower seeds and all the remaining ingredientsexcept the mayonnaise. Process well to fully combine.
  • In a small mixing bowl, stir togetherthe olive mixture and the mayonnaise until well blended. Transferto a serving bowl. Serve at room temperature.

    Makes 8 servings.
