Green Chile Rice Pilaf recipe

Here’s a tasty side dish with lots of interestthat won’t overpower your next Mexican entr e. This makesa substantial portion so it is perfect for a large gatheringor potluck supper.

Recipe: Green Chile RicePilaf

1 pound mushrooms, thinly sliced
1/2 cup chopped onion
1/4 cup butter or margarine
3 1/2 cups uncooked white rice
7 cups chicken broth
1 can (4-ounce) diced green chiles

  • Coof mushrooms, onion and butter in largesaucepan over medium heat until tender. Add rice; cook for 5minutes. Add broth and chiles; bring to a boil. Cook for 20 minutesor until moisture is absorbed and rice is tender. Fluff withfork before serving. Reduce heat to low; cover.

    Makes 8 servings.
