Green Bean and Sweet Onion Salad recipe

Simply delicious! Warm, freshly steamedgreen beans and thinly sliced sweet onion are tossed in a sweetbalsamic vinaigrette.

Recipe: Green Bean and SweetOnion Salad

1 1/2 pounds green beans, trimmed andcut into 1 1/2-inch pieces1 Maui or Vidalia onion, halved and slicedthin6 tablespoons extra-virgin olive oil2 tablespoons balsamic vinegar1 1/2 teaspoons packed brown sugarSalt and freshly ground black pepper totaste

  • On a steamer rack set over boiling watersteam green beans, covered, until crisp-tender,about 4 minutes.
  • In a large serving bowl whisk togetherthe oil, vinegar, brown sugar, salt and pepper. Add the warmbeans and onion and toss to coat well.

    Serves 6.
