Recipe: Granny Smith ConfettiColeslaw
4 cups chopped Granny Smith apples
2 tablespoons lemon juice
2 cups chopped cabbage
1 red pepper, chopped
2 green onions finely chopped
2 tablespoons chopped sweet pickles (optional)
Confetti Slaw Dressing (recipe follows)
Makes 6 to 7 servings.
Confetti Slaw Dressing:
1/4 cup yogurt2 tablespoons sweet pickle juice2 teaspoons Dijon mustard1/2 teaspoon honey1/4 teaspoon black pepper1/8 teaspoon celery seed
