Good Morning Bars recipe

Enjoy these oatmeal and jam bars with hotcup of coffee or tea in the morning or afternoon.

Recipe: Good Morning Bars

1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 cup firmly packed brown sugar
1 1/2 cups quick cooking oatmeal
3/4 cup butter
2 cups apricot jam

  • Preheat oven to 325°F (160°C).
  • Mix together flour, baking powder, brownsugar, and quick cooking oatmeal in a medium bowl. Cut in 3/4cup butter until the mixture resembles coarse crumbs.
  • Pat two-thirds into a greased 13 x 9-inchbaking pan. Spread apricot jam evenly on top. Sprinkle the topwith the remaining crumb mixture. Bake for 45 minutes, or untilcrispy brown on top. Cool before cutting into bars.

    Makes 12 bars.

    Just made these this afternoon with my 11-year old niece, for her teacher s birthday tomorrow. The recipe doubles easily! Thanks a bunch for it I think the bars will be a big hit! The story behind the name is related to the presence of c6 cereal in the ingredient list. Cereal in baked goods means you can eat them for breakfast, right? Right?!?
