Incredibly moist and flavorful spiced appleand nut fruitcake with a sugar glaze.
Recipe: Golden Apple Fruitcake
3 Gala or Golden Delicious apples,peeled, cored, and chopped
2 cups mixed, diced candied fruit, plus more for garnishif desired
1 1/2 cup chopped pecans, plus more for garnish if desired
1 cup chopped dates
3 cups all-purpose flour – divided use
1 teaspoon baking powder
3/4 teaspoon ground cinnamon
3/4 teaspoon ground nutmeg
1/2 teaspoon ground allspice
1/2 teaspoon ground cloves
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup vegetable shortening
3/4 cup granulated sugar
3/4 cup packed brown sugar
4 large eggs
Sugar Icing (recipe follows)
Makes 14 servings.
Sugar Icing:In medium bowl, blend 1 1/2 cup confectioners (powdered)sugar and 2 tablespoons butter or margarine. Add 1 teaspoonrum flavoring and 1 to 2 tablespoons milk; mix until smooth andspreading consistency.
