Goat Cheese and Herb Dip recipe

Fresh herbs and goat cheese are combinedto make delicous dip. Serve with toasted baguette slices andassorted raw vegetables.

Recipe: Goat Cheese and HerbDip

8 ounces soft fresh goat cheese (suchas Montrachet)3 tablespoons olive oil3 tablespoons plain yogurt2 tablespoons chopped fresh chives2 tablespoons chopped fresh Italian parsley(flat leaf)1 tablespoon chopped fresh cilantro1 teaspoon chopped fresh mint1 teaspoon chopped fresh thyme1/2 teaspoon chopped fresh rosemarySalt and freshly ground pepper to tasteToasted baguette slicesAssorted raw vegetables

  • Blend goat cheese, oil and yogurt in processoruntil smooth. Transfer to small bowl.Mix in the herbs. Season dip to taste withsalt and pepper.
  • Cover and refrigerate until dip is coldand flavors blend, about 3 hours. (Canbe made 1 day ahead. Keep chilled.)
  • Serve dip with toasted baguette slicesand raw vegetables.

    Makes about 1 1/2 cups.
