Recipe: Gingerbread Cupcakes
1/2 cup molasses
3/4 cup very hot water
1/2 teaspoon baking soda
4 tablespoons unsalted California butter, softened
1/2 cup firmly packed brown sugar
1 large egg
1/4 teaspoon salt
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1 1/3 cups all purpose flour
1 1/2 teaspoons baking powderFor Frosting:
8 ounces cream cheese, room temperature
2 tablespoons unsalted California butter, room temperature
2 cups powdered sugar, sifted
1 teaspoon vanilla extract
12 small gingerbread-man cookies
Evenly divide batter between cupcake molds. Bake until a toothpickinserted in the middle comes out clean, about 20 minutes. Coolfor 15 minutes. Remove the cupcakes from the pans. Cool completelybefore frosting
Makes 12 cupcakes.
