Gem Cake recipe

‘Cake-mix-easy’! Somewhat lighter in texturethan pound cake, yet not as light as chiffon cake, Gem cake isabsolutely scrumptious. Alone, it literally melts in your mouth.It can be paired with any number of fillings (like lemon curd,whipped cream, or chocolate frosting) to make it even more fabulous.

Recipe: Gem Cake

1 (18.5-ounce) package butter recipe goldencake mix
1/3 cup granulated sugar
1 tablespoon all-purpose flour
1 cup sour cream
1/2 cup vegetable oil
4 large eggs

  • Do not preheat oven. Spray a 12-cup Bundtpan with cooking spray. In a large mixing bowl, combine the cakemix, sugar, sifted flour, sour cream, and oil. Add the eggs andmix on low speed for 1 minute. Increase the mixer speed to medium-highand beat for 4 minutes, or until light and fluffy.
  • Pour the batter into the prepared pan.Set the oven temperature to 325°F (160°C) and bake for50 minutes, or until a cake tester inserted in the middle ofthe cake comes out clean. Cool the cake in the pan.

    Makes 18 servings.

    Run a knife around the edges of the gem-iron moulds and remove the cakes immediately, or remove the patty cases. Place the cakes on a clean tea towel to cool.
