Garlic Mashed Potatoes recipe

Dress up your mashed potatoes for the nextfamily gathering. Experiment with other flavored spreadable cheeses.

Recipe: Garlic Mashed Potatoes

4 pounds small red or gold potatoes, cleaned(unpeeled)
2 (5-ounce) packages garlic-flavored spreadable cheese
3/4 cup canned chicken broth
Salt and pepper, to taste

  • In a large saucepan, boil potatoes gentlyuntil tender enough to be mashed, about 30 to 40 minutes.
  • Drain and transfer potatoes to a largebowl; mash with cheese, adding broth gradually until potatoesare of desired consistency; season to taste.

    Makes 8 to 10 servings.


    • If serving potatoes immediately, heatbroth before adding.
    • If making ahead, cover well and chillup to one day.
    • To reheat, place potatoes in an ovenproofdish and heat in oven (350°F to 400°F / 175°C to205°C) for 30 minutes.

    I m a novice as far as cooking goes and managed to get roped into making mashed potatoes for a fairly large group while camping. I saw in some of your replies that you said it could be boiled in a pot for shorter time. Were I to double the recipe how long would you suggest cooking for? Ahhhm, is sticking an electric mixer directly into a slow cooker some kind of bad cooking voodoo basement black magic? I have lost touch with reality down here amongst the dirty cement bricks. Bring me to the light.
