Garlic Ginger Turkey Breast with Mango Glaze recipe

Whole turkey breast or split breasts withlime, garlic, and ginger tucked under the skin, grilled witha mango citrus glaze.

Recipe: Garlic Ginger TurkeyBreast with Mango Glaze

4 to 5 pounds Honeysuckle White TurkeyBreast or use 4 to 5 pounds Honeysuckle White Split Turkey Breast
1 medium fresh lime, thinly sliced with peel
1 bulb garlic, separated into cloves
1 tablespoon fresh ginger root, finely chopped or use1 teaspoonginger, powder
1 tablespoon olive oil or use 1 tablespoon vegetable oil
1/2 teaspoon. salt
1/2 teaspoon black pepper, coarsely ground
Mango Glaze:
2 ripe mango, peeled, cut into 1/4-inch pieces
1/2 cup fresh orange juice
1/4 cup cider vinegar
2 teaspoons lime peel, grated
2 tablespoons fresh lime juice
1 tablespoon fresh ginger root, finely chopped or use 1 teaspoonground ginger
1/3 cup cilantro, fresh, chopped or use 1/3 cup parsley, fresh,chopped

  • Loosen skin around turkey breast. Tucklime slices, garlic cloves and ginger root under the skin. Brushturkey with oil; sprinkle with salt and pepper.
  • Grill over hot coals according to barbecuedirections (1 1/2 to 2 hours).
  • Meanwhile, in medium saucepan combineall Mango Glaze ingredients except cilantro. Cook over mediumheat, stirring occasionally, until sauce is thickened (20 to25 minutes). Stir in cilantro. Brush over turkey while grillingor serve with grilled turkey.

    Place turkey in a shallow dish. Combine the garlic, ginger and shallots in a mini-food processor and process until minced. Next add the honey, soy sauce, olive oil, lime juice and black pepper. Blend until thoroughly combined. Pour marinade over turkey and let sit at room temperature for 25-30 minutes. Preheat grill to medium heat and cook for 6-8 minutes per side or until done. Let rest for 5 minutes. well, as always it looks delish and I can t wait to make it however, when did you get a panini press how did this slip by me? I m so upset I need a panini now!
