A cookie bar with a shortbread crust anda creamy fudge filling.
Recipe: Fudge Almond Bars
3/4 cup butter, softened
3/4 cup powdered sugar
1 1/2 cups all-purpose flour
1/3 cup butter
1/2 cup unsweetened baking cocoa
1 (14-ounce) can sweetened condensed milk (not evaporated milk)
1 1/4 cups almonds, toasted and coarsely chopped*
1/2 cup hot water
2 large eggs, well beaten
1/2 teaspoon almond extract
1/8 teaspoon salt
Makes 24 bars.
* To toast almonds: Heat oven to 350°F(175°C). Spread almonds in thin layer in shallow baking pan.Bake 8 to 10 minutes, stirring occasionally, until light goldenbrown; cool.
