Fruited Pound Cake recipe

Use colorful holiday gift wrapping tissueand ribbon to creatively package mini pound cakes to give tofriends during the holidays.

Recipe: Fruited Pound Cake

2 1/4 cups all-purpose flour
1 1/2 cups granulated sugar
1 cup butter or margarine, softened
1 (8-ounce) package cream cheese, softened
4 large eggs
1 1/2 teaspoons baking powder
1 1/2 teaspoons vanilla extract
1 1/2 cups mixed candied fruit, chopped
1/2 cup chopped walnuts

  • Heat oven to 350°F (175°C).
  • Combine 1 1/4 cups flour and all ingredientsexcept candied fruit and walnuts in large mixer bowl. Beat atmedium speed until well mixed. Stir in remaining 1 cup flour,candied fruit and walnuts by hand.
  • Pour into 6 greased (5 1/2 x 3-inch) miniloaf pans.
  • Bake for 45 to 55 minutes or until woodenpick inserted in center comes out clean. Cool 10 minutes; removefrom pan. Cool completely.

    Makes 48 servings (6 mini loaves).


    • Substitute 2 greased (8 x 4-inch) loafpans. Bake for 50 to 60 minutes.
    • Wrap each loaf with a lining of waxedpaper or aluminum foil before wrapping in colorful holiday giftwrapping and tying with ribbon.
