Fruitcake recipe

For fruitcakes, this one stands alone becauseit is absolutely delicious! And it is truly a fruitcake…there’snot one spoonful of flour in the entire mix.

Recipe: Fruitcake

1 pound pitted dates, cut in pieces1 pound glazed cherries, halved2 pounds pecans, chopped1/2 pound shredded coconut1 pound glazed pineapple, cut in pieces1 (14-ounce) can sweetened condensed milk1 teaspoon vanilla extract

  • Grease three 8 x 3 3/4 x 2 1/12-inch loafpans. Preheat oven to 275°F (135°C).
  • Mix dates, cherries, pecans, coconut andpineapple in a large bowl. Add milk and vanilla, continuing tomix.
  • Pack very tightly in prepared pans. Bakefor 1 1/2 hours.

    Makes 3 (2-pound) fruitcakes.
