Recipe: Frozen Coconut Dessert

1 1/2 sleeves of Ritz Brand crackers, finely crushed
1 stick (1/2 cup) margarine or butter, meltedFilling:
3 boxes coconut instant pudding
2 1/2 cups milk1/2 gallon vanilla ice cream, softened
1 cup sweetened flaked coconut1 (12-ounce ) container non-dairy whippedtopping
Toasted coconut

  • For Crust: Combine cracker crumbs andmargarine together, press into an ungreased 13 x 9 x 2-inch pan.
  • For Filling: Combine pudding mix and milkwell, then slowly add the ice cream and coconut.
  • Spread filling over prepared crust andtop with the whipped topping and sprinkle with the toasted coconut.
  • Store in freezer. Remove from freezerseveral minutes before serving.

    Makes 12 servings.
