Frosted Pumpkin Bars recipe

Moist pumpkin cookie bars frosted witha sweet tangy cream cheese frosting.

Recipe: Frosted Pumpkin Bars

2 cups all-purpose flour2 tablespoons baking powder1 tablespoon baking soda1/4 teaspoon salt2 teaspoons ground cinnamon1 cup vegetable oil1 (16-ounce) can pumpkin4 large eggs2 cups granulated sugar1 teaspoon pumpkin pie spiceCream Cheese Frosting:4 ounces cream cheese, softened1/2 cup butter, softened1 1/2 teaspoons vanilla extract3 cups powdered sugar1 1/2 teaspoons milk

  • Heat oven to 350°F (175°C).Grease 17 x 11 x 1-inch pan and set aside.
  • In a medium bowl combine flour, bakingpowder, baking soda and salt, and setaside.
  • Cream together the oil, pumpkin, eggs,sugar, cinnamon and pumpkin pie spice.Stir in flour mixture, mixing well.Pour into prepared pan.
  • Bake for 20 to 25 minutes. Cool completely before frosting.
  • For Cream Cheese Frosting: Cream togetherthe cream cheese, butter and vanillatogether. Slowly add the powdered sugar andmilk. Add a few drops more milk, if needed forspreading consistency.

    Makes 2 dozen bars.
