Fresh Tomato Sauce with Basil recipe

Every cook should have at least one goodfresh tomato sauce in her/his culinary repertoire. Serve thissimple, yet intensely flavorful sauce over your favorite pastaand top with a light sprinkling of Parmigiano Reggiano, if desired.For the best taste, use only vine-ripened tomatoes, otherwise,I would suggest substituting with canned tomatoes.

Recipe: Fresh Tomato Saucewith Basil

2 tablespoons finely chopped onion1 to 3 garlic cloves, finely minced2 tablespoons extra virgin olive oil2 large vine-ripened tomatoes, seededand coarsely chopped2 tablespoons chopped fresh basilSalt and freshly ground pepper to taste

  • Saute onion in oil in a large saucepanover medium-high heat until softened, stirring often; add garlicand cook for several more seconds. Add the tomato, reduce heat,and simmer uncovered for 10 minutes, stirring occasionally. Removefrom heat.
  • Stir in basil and season to taste withsalt and pepper. Serve over hot, freshly cooked pasta of yourchoice.

    Makes about 1 1/2 cups.
