Simple, yet sophisticated, this ‘flatbreadpizza’, made with whole-wheat tortillas, is topped with meltedbutter, slices of fresh plums, walnuts and gorgonzola cheese.
Recipe: Fresh Plum, Walnutand Wisconsin Gorgonzola Pizza
12 (8-inch) whole-wheat tortillas
4 tablespoons (1/2 stick) butter, melted
24 fresh, large plums, pitted* and thinly sliced
3/4 cup chopped walnuts
3 cups (18 ounces) crumbled Gorgonzola cheese
Makes 12 servings.
*Fresh pears may be substituted for theplums when plums are out of season, using about 1/2 pear perpizza.
