Fresh Mint Ice Cream recipe

Serve this fresh mint ice cream with chocolatecookies for a refreshing finish to your next dinner party. Thegreen creme de menthe gives the ice cream a pretty color andthe fresh pineapple lends an unexpected flavor.

Recipe: Fresh Mint Ice Cream

2 cups firmly packed fresh mint leaves1 1/2 cups granulated sugar1 1/2 cups water1 cup cubed fresh pineapple1 cup light corn syrup1 cup unsweetened pineapple juice2 cups milk2 cups whipping cream1/2 cup green creme de mentheFresh mint sprigs for garnish (optional)

  • Combine first 6 ingredients in a largebowl; stir well. Pour half of mint mixture into container ofan electric blender; cover and process until smooth, stoppingonce to scrape down sides. Repeat procedure with remaining mintmixture.
  • Pour mixture into freezer container ofa 1-gallon hand-turned or electric freezer. Add milk, whippingcream, and creme de menthe; stir well.
  • Freeze according to manufacturer’s instructions.Pack freezer with additional ice and rock salt, and let stand1 hour before serving.
  • To serve, spoon into individual dessertdishes. Garnish, if desired.

    Makes 6 cups.
